Asparagus, Tofu & Goji Berrie Salad

Salads are made predominantly of vegetables which provide a great source of insoluble fibre which keeps your digestive tract healthy. If you add nuts, seeds or beans to the salad you’ll get a boost of soluble fibre that helps lower cholesterol and keeps blood sugar balanced.
I have shared with you below one of the salads included in my fitness program.
ASPARAGUS, TOFU & GOJI BERRIES
Ingredients:
  • 1 bunch asparagus, trimmed, peeled, cut diagonally into 5cm lengths
  • 40 ml (1/3 cup) extra-virgin olive oil
  • 4 thick slices of tofu
  • 50gm of feta cheese, crumbled
  • Hand full of seeds
  • To serve: baby basil, spinach leaves and red cabbage
  • Hand full of goji berries
  • Cashews
  • Juice of 1 lemon
  • Pinch of salt &  pepper
Fry the asparagus and pieces of tofu for a few seconds, add salad mix leaves with red cabbage, a few seeds and a hand full of goji berries. For the dressing – combine olive oil, lemon juice, salt and pepper.
